The gate that nothing passes through unmarked

Why the standard is held at the point of production - not managed afterwards in the market.


There is a version of Wagyu assurance that happens after the fact. A claim of quality made at the point of sale, by people who were not in the abattoir, about animals they did not inspect, based on a grade given by a third party and conveyed in a number.

That is not what we do.


Every carcase that carries a Paradigm Foods brand name has passed through a gate. The gate is real, not administrative - it exists at the point of production, in the abattoir, at the moment when the animal either makes it or it does not.

The process is this: every carcase is graded by Japanese digital imaging - the MIJ camera. That produces a data set: marbling score, fat colour, meat colour, fat distribution. That data set is then run through AI-assisted analysis. And then - after the technology has done what technology does - the carcase is assessed in person, by our team.

The sequence matters. Technology is the tool. The standard is held by the people who look at every carcase and ask a question no algorithm asks: does this carry our name?


What the chef or distributor needs to understand about this process is not the mechanics. It is the implication.

We are not grading to a curve. We are not finding the top percentile of what arrived and calling it acceptable. We are applying an absolute standard - and what does not meet that standard does not carry the brand.

This is a reputational decision, made at the point of production. The understanding behind it is simple: a brand name means something only if it is defended at the moment of truth, not managed retrospectively after something substandard has already reached a kitchen. Once a carcase leaves our processing facility carrying our name, it may be at a fine-dining table somewhere. The defence of the standard happens before that - not after.

There are animals that come through our programs that do not make the grade. Some very nearly do. They do not carry the brand. That is the gate, and it is not moved for convenience.

The selection of processing facilities follows the same logic as the selection of farming partners. We looked for the facilities best suited to the specific demands of each brand - the grade of animal, the export requirements, the certifications needed to reach our markets. We did not choose on convenience.

All facilities are halal certified. All product is HGP-free. All product leaves the facility cryo-vacuum sealed, prepared for global shipping. The certification stack is not an afterthought - it is what makes the brands globally usable, by the buyers across thirty countries whose menus and compliance requirements demand it.


For the distributor, this matters in a specific way. The conversation with your chef clients begins before the product arrives - at the point where you describe what you are bringing them. You are representing not just the carcase but the process behind it. When a distributor places our brands with a Michelin-starred kitchen, that chef is trusting two things: the product in the box, and the claim made about how it got there.

The grading gate is the answer to that second question. It is what allows a distributor to say, without hesitation: every carcase that carries this name was individually graded, AI-analysed, and hand-inspected before it left the facility. Nothing that did not make the standard carries the brand.

For the chef, it answers the consistency objection. Not “we think this will be good” - “we checked, physically and systematically, and only the ones that passed are in the box.”


At this level, what separates a brand from a product is not the headline marbling score. It is the confidence with which you can put it on the plate - service after service, order after order - and know that what you told the guest is still true.

That confidence begins at the gate.
