Roam is extensively grass-fed Wagyu - mature-aged, raised on open pasture without a grain program and without a deadline. The animals move across the country. They graze through the seasons. They develop the particular depth of character that comes only from time, land, and the absence of intervention.
There is a flavour in Roam that grain-fed Wagyu cannot produce. Deeper. More mineral. More directly connected to where this animal lived and what it ate. It is the flavour of a specific piece of Australian country, carried to the table without being translated.
This is not a compromise on grain-fed. This is a different conversation entirely.

The Source

ROAM exists in a different time. Fully grown and finished on grass. Free to roam. Mature aged. No grain.
The genetics are varied in Wagyu content, but the philosophy is singular: fat deposition developed over time, carried by the land itself. Patience made tangible.
Low-stress environments, consistent handling, unhurried progression - these are not added practices. They’re foundational. The cattle are calm because they move through a natural rhythm. The flavour carries the land because the animal has had time to express it.
The Craft
Restraint as craft.
The craft in Roam is largely the craft of not intervening. No grain supplementation. No feedlot program. The animals are managed for welfare and condition, moved through the property in a way that allows the land to recover and the animal to develop at its own pace.
Harvest timing is determined by the animal’s condition and the season, not the calendar. This produces natural variation from year to year - in marbling expression, in flavour profile - that is not a defect but a character. Graded with the same rigour applied to all Paradigm Foods brands. Hand-inspected. Halal certified.

On The Plate
It tastes like somewhere.
Roam has a depth that is different from richness. Where grain-fed Wagyu is about luxury and intensity, Roam is about place. The flavour carries something of the country it came from - mineral, specific, with a vitality that is difficult to describe but immediately recognisable to a cook who pays attention.
The fat melts cleanly and without heaviness. The texture is firmer and more structured than a heavily marbled grain-fed Wagyu - it responds well to techniques that respect the integrity of the muscle. Good fire. Good salt. Nothing unnecessary.
