YUGO comes from a specific conviction: that the meeting point of Japanese Wagyu genetics and Australian pastoral craft does not have to be a compromise. It can be something new - with its own character, its own flavour profile, and its own place on the modern menu.

Named for the Japanese word for fusion, YUGO is the F1 Wagyu for kitchens that draw influence from everywhere and commit to nothing less than what is genuinely interesting. The Source

Two bloodlines in conversation.

YUGO is F1 Wagyu - the first cross of a Wagyu sire and an Australian Angus dam. The genetic balance is 50/50, but the result belongs to neither tradition exclusively.

The Wagyu component brings the marbling density and the flavour complexity. The Angus component brings the carcase structure and the eating weight. Together, they produce an F1 that is genuinely versatile - on a Japanese grill, a wood fire, or a precision plancha.

The Craft

YUGO is produced on a purpose-designed longfed grain program, drawing on the tradition of Japanese Wagyu feeding while adapting to the specific requirements of F1 genetics. The feed ration, feeding duration, and pen management are all calibrated to maximise marbling expression within the F1 carcase frame.

YUGO responds well to technique. It takes the char of a wood grill without losing its identity. It holds its texture under the precision of a Japanese knife. It benefits from acidity and contrast in the way that complex Wagyu fat tends to.

The marbling is generous. The flavour carries the umami depth of the Wagyu genetics with the cleaner, more immediate base of the Angus. It finishes long and leaves room for the cook to make their mark.
