This is fullblood Wagyu at its most elemental - 100% Japanese genetics, bred in the cool, clean air of Southern Australia, where the island’s particular climate and pasture produce a starting point that grain-fed programs elsewhere simply cannot replicate. The conditions are as exacting as the bloodline that defines it.

There is something in MUSE that sets it apart. A quality that lives not only in the marbling - though the marbling is extraordinary - but in the finish. The way the fat dissolves slowly. The way the flavour builds in layers and stays.

The Source

The bloodline is the difference.

100% Japanese genetics. Fullblood Wagyu, no crossbreeding, no compromise.

Every animal is genetically verified and registered through the Australian Wagyu Association. Every generation is traceable. Pedigree runs back to foundation animals from Japan - most notably, the Tajima bloodlines from the Hyogo region, the architecture upon which our genetics rest. These are not just names. They are the genetic blueprint of marbling itself.

We use genomics to predict marble scores before an animal exits the feedlot. We employ software programs to design the optimal partnership between sires and dams, selecting for the specific traits that define sensuality at the table: intramuscular fat distribution, fineness of marbling, the way fat melts across the palate. Every sire, every dam, chosen with exacting precision.

Born, bred, and finished in Southern Australia. Only the animals that achieve the highest grades qualify for MUSE. The rest, no matter how close, do not carry the name.

The Craft

Precision does not shout.

MUSE is raised on an extended grain program built specifically to allow fullblood genetics to express themselves fully. The feed ration - a carefully formulated blend designed for this class of animal - and the duration of the program are calibrated not to a calendar but to the animal.

At processing, every MUSE carcase is assessed using Japanese digital imaging technology, supported by AI-assisted verification. Every carcase is then hand-inspected by our team. Nothing that does not meet the standard carries the brand. Processing is carried out at G&K O’Connor’s accredited facility. All MUSE product is halal certified and cryo-vacuum sealed for global delivery.

This is what fullblood tastes like.

The first thing you notice is the colour - the deep red of the muscle against the ivory white of fat distributed so evenly it seems drawn.

On the grill or plancha, the intramuscular fat begins to melt before the surface has fully coloured. The aroma is extraordinary: sweet, rich, faintly mineral. The finish is long - layers of umami, a background sweetness, and a quality that builds through the chew and stays with you.
