It is the F1 Wagyu that chefs and buyers return to - not because we have declared it the benchmark, but because those who have worked with it long enough have reached that conclusion on their own.
F1 is 50% Wagyu, 50% Australian Angus. The art is entirely in the balance. Too much Wagyu expression and you lose the structure that makes it practical on a busy service. Too much Angus and you lose the point. ICON holds that line precisely - the marbling depth of Wagyu, the carcase integrity and eating weight of a well-bred Australian Angus, performing together without compromise.

ICON is the benchmark because its genetics are built on precision, not compromise.
The architecture: Fullblood Wagyu sire crossed with carefully selected dams - primarily Angus, chosen for specific traits. Dams selected for frame, eating quality, and maternal ability. This is not random. Every dam is evaluated against standards. Every sire choice is backed by data and genomics.
We measure everything. Growth from farm to feedlot. Marbling scores predicted by bloodlines. Kill data that shows us exactly how each genetic pairing performs. Every data point feeds into the next breeding decision.
The result is consistency. Balance without compromise. The F1 against which others are measured.
The Craft
The discipline of consistency.
ICON is produced on a 365-day grain program, calibrated specifically for F1 genetics. The feed ration is formulated to drive marbling accumulation through the Wagyu component while maintaining carcase structure and yield through the Angus. The program is designed to let both genetics express themselves - not to force one to dominate the other.
Every ICON carcase is graded at Stanbroke using AI-assisted imaging technology and hand-inspected before packing. Halal certified. Cryo-vacuum sealed for global distribution.

This is what a benchmark feels like.
ICON is the most approachable Wagyu in the House - but approachable is not the same as simple. The marbling is generous without being excessive. The fat melts cleanly and the flavour is rounded and deep, with a finish that is long without being heavy.
